Garlic Flavour Clams with Tofu Stew
These tiny, sweet tasting bivalves are a hardy and fecund species, so when fished sustainably, like the ones in this recipe, clams check all the boxes for a tasty, healthy and sustainable dinner.

INGREDIENTS
Serves: 2
The seafood

500g MSC certified clams
THE REST:
300g soft tofu
10g pickled pepper
1 bulb of garlic (peeled and mashed)
2 spring onions (scallions) finely sliced
250ml beer
1 tsp salt
1 tsp chicken stock powder
1 tsp sugar
30ml spring onion (scallion) oil
2 tsp soybean oil
SPRING ONION (SCALLION) OIL:
480ml cooking oil (Vegetable, Sunflower, Rapeseed)
15 spring onions (scallions) sliced in half lengthways

STEP ONE
Scallion oil
To make the scallion oil, chop and then gently simmer the spring onions in the oil until they are very soft and only slightly brown.
When cool pour into an airtight jar and store.

STEP TWO
Soak and clean clams in sink or bowl of cold water. Discard any that are open or floating (if using live clams).

STEP THREE
Chop the tofu into 2cm / 1” thick cubes and set aside.

STEP FOUR
Boil a pan of water and put the clams into it until the shells open up (discard any that don’t open), then remove the clams and keep 250 ml / 8 fl oz of the resulting clam stock.

STEP FIVE
Quickly blanch the tofu then place it on plate.
Heat a wok and add scallion oil, soybean oil, and then add the pickled pepper and mashed garlic, mix well until the fragrance comes up.

STEP SIX
Then add clam soup and beer to cook for 5 minutes while the garlic spicy flavour purely turns into the spring onion fragrance in the soup.

STEP SEVEN
Finally, add clams to stew for half minute over low heat.
ET VOILA!
Turn the stew into a large serving bowl and sprinkle the chopped spring onion on top to garnish.
