There are seven known species of Pacific salmon found in North American and Asian waters, and one species of Atlantic salmon, which is mainly farmed.

There are seven known species of Pacific salmon found in North American and Asian waters, and one species of Atlantic salmon, which is mainly farmed.

The term ‘salmon’ derives from the Latin word ‘salmo,’ which is said to have originated from ‘salire’, which means ‘to leap’. This seems fitting considering salmon can jump up to two metres to cross obstacles in rivers. Each species has slightly different characteristics but typically salmon has firm, succulent flesh, and is red to orange in colour. This is from a diet rich in shellfish and a high oil content.

INGREDIENTS

REMEMBER TO

4 x 200g MSC certified sockeye salmon

140g broccolini, split

60g yellow onion, thinly sliced

3 cloves garlic, thinly sliced

1½ tbsp fresh dill, chopped

juice of a navel orange

thinly sliced navel orange

20g butter, slice into 5g pieces

salt & black pepper to taste

4 x 45cm parchment paper


Let's cook!

STEP 1

Preheat oven to 200°C.

STEP 2

Place 35g of broccolini & 15g of onion on each parchment paper.

STEP 3

Season with salt and pepper.

STEP 4

Then place Salmon on top of broccolini, season with salt & pepper, and top with garlic, dill, butter, and 2-3 slices of navel orange.

STEP 5

Spoon 1-2 tbsp of orange juice over salmon, then fold to seal.

STEP 6

Bake for 10 minutes or until cook through. Be careful while opening the packages.
