Prawns are crustaceans from the order Decapoda, meaning 'ten-legged' (or technically, 'ten-footed'). Their sweet taste and firm texture make them ideal for many dishes, and they are sold fresh or frozen, raw or cooked.  Wild prawns are fished all over the world, in the Atlantic, Pacific, Arctic and Indian Oceans. More than half of wild-caught prawns in Australia are now MSC certified.

Australia's prawn fisheries have developed a range of bycatch reduction devices to reduce the amount of other fish and marine species caught in prawn trawling nets, including turtle excluder devices (TEDs) which allow turtles, sharks and rays to safely escape from nets. More than half of wild-caught prawns in Australia are now MSC certified. This is important, as in many cases they are found in areas of particular ecological significance, and fishing methods must not damage the delicate environmental balance.

INGREDIENTS

12 XL Coles green king prawns, shells left on
¼ cup Coles Extra Virgin Olive Oil
1 tablespoon fresh ginger, grated 
1 teaspoon ground cumin
1 teaspoon garam masala 
1 teaspoon ground turmeric
1 teaspoon ground sweet paprika  

Mango Salsa:
1 mango, chopped into 1.5cm cubes
1 Lebanese cucumber, diced
1 small red onion, finely diced 
1 long green chilli, finely chopped
zest and juice of 1 lime, plus extra wedges to serve  
¼ cup mint leaves, chopped
¼ cup coriander sprigs, plus extra to serve  

Let's cook!

STEP 1

Mix together the oil, ginger and all the spices and a pinch of salt and pepper in a large bowl.
Toss the prawns through the marinade and set aside.

STEP 2

Place all the mango salsa ingredients into a bowl and gently toss to combine.

STEP 3

Heat a BBQ Plate to high and grill the prawns for 2 mins each side, or until fragrant,
cooked through and slightly charred.

STEP 4

Place the prawns onto a serving platter and scatter over some of the mango salsa. Serve the prawns warm with extra lime wedges and coriander sprigs.
